San Miguel Taste: Pirules Garden Kitchen at Rosewood San Miguel Hotel

By Amy Rothlin

It is my mother’s birthday this month and like every year, I like to celebrate her life by presenting her with a special evening out.  Pirules Garden Kitchen far exceeded any expectations we had; ‘wow’ pretty much represented every minute of our unique experience. It is as if Rosewood Hotel has unveiled a secret garden where you get to indulge in a beacon of elegance yet casual ambiance that unfolds not just as a culinary gem but as an oasis that delights all the senses.

Prominently situated with a prime view, Pirules Garden Kitchen offers a sustainable dining experience led by Chef Odín Rocha. It's been three weeks since their opening, and I can already foresee beautiful success for him.

Every dish on the menu is meticulously curated with locally sourced ingredients within 15 miles of them. With a blend of ancestral techniques and modern creativity, each meal reflects a commitment to responsible consumption and celebrates local culture. Chef Odín Rocha has extensive experience in contemporary Mexican cuisine, he is known for his emphasis on fresh, local ingredients and rustic techniques, Odín’s culinary journey includes a significant residency at the three-Michelin-star Mirazur in France, as well as collaborations with world-renowned chefs.

We began the evening at their beautiful outdoor bar and seating area surrounded by a few cozy fireplaces; I decided to go for their signature cocktail, “Pirul” (Mezcal, tequila, agave honey, grapefruit infused sparkly and Himalayan salt) beware, they are served in tall glasses! As we admired golden hour, mesmerized by the Parroquia view and gardens in the background, we enjoyed one of their garden area appetizers, the Bajio Cheese Platter, with apple compote, apricot, and a side of masa madre bread paired with their Rosewood signature red wine from Valle de Guadalupe; a blend of Syrah, Cabernet Sauvignon, and Petit Verdot.

Aidé, the sommelier was fantastic explaining the wine menu. The simple yet beautifully designed dining area features an open Kitchen where you can be a witness to the craftsmanship of the grilled, smoked, and baked creations being freshly cooked in front of you.

We moved on to the main menu, which significantly highlights the region's culinary heritage, I highly recommend trying the Short rib Fideúa with cured egg yolk and Salsa Macha, the slow-cooked sweet potato glazed with Atotonilco organic honey and macadamia nuts.

The Duck breast with roasted onions, confit duck legs, and seasonal fruit stand out on the main selections, as well as the locally farmed rack of lamb joined with smashed potatoes and harvest vegetables of the day. Featuring an array of appetizers, mains, lunch specials, and mains to share; the menu awaits to tantalize your taste buds, I just cannot wait to go back! A restaurant's atmosphere and service are pivotal in creating memorable moments, and Pirules excelled with the staff being so genuine and going above and beyond to keep you pampered. Be sure to ask for Antonio, who is very attentive and has been working at Rosewood Hotel for 14 years.

While the price point is on the higher end, the quality of the food, the ambiance, and the service make it a worthwhile investment. Location: The entrance is on Cardo Street, across from St. Paul's and the IMSS Guarderia. Reservations for the weekend are recommended.
